Preheat oven to 275 degrees
Prep and cooking time: 3 hours, approximately 20 minutes per pound
Ingredients:
1 6-8 pound fully cooked ham
1 cup brown sugar
¼ granulated sugar
½ cup honey
1 cup coconut milk
1 cup pineapple juice
¼ cup butter
1/3 cup orange juice
1 teaspoon salt
1 tablespoon fresh cracked black pepper
Directions:
Place all of the above ingredients (except the ham) in a sauce pot. Cook over medium heat until a sauce is formed, and the sugar crystals are fully dissolved.
Put the ham fat side up in the roasting pan. Make diamond shaped scores on the fat, then place 1/3 of the sauce over the ham. Every 20 minutes place more of the sauce over the ham until the mixture is gone.
Continue to baste the ham with the pan-drippings until it is fully cooked.
Let the ham rest for at least 20 minutes before carving.
