Gazpacho Recipe

Gazpacho
Gazpacho is a cold, tomato-based soup that is very easy to make. It is delicious and refreshing- perfect for those hot, summer months.
Prep time 30 minutes Serves 8-10 Ingredients 12-14 Roma tomatoes, peeled and de-seeded (6-8 cups canned tomatoes may be substituted) 6 cups tomato juice ¼ cup extra virgin olive oil 2 tablespoons Worcestershire sauce 1 tablespoon apple cider vinegar 2 tablespoons balsamic vinegar zest and juice of 2 lemons zest and juice of 1 lime 1 teaspoon minced, fresh garlic ½ cup chopped celery ½ cup chopped red onion ½ cup peeled, minced carrots ½ cup chopped each red, yellow, orange and green pepper 1 small chopped jalapeño- (include seeds for more heat) 2 cups seedless cucumbers, chopped ½ teaspoon cumin 1 tablespoon fresh-cracked black pepper ½ teaspoon Kosher, or sea salt 1 small bunch chopped Italian flat-leaf parsley 1 small bunch chiffonade of basil Directions Put all of the above ingredients in a large ceramic or metal container. Place in the fridge for 2 hours so that all of the combined flavors can bloom. Remove from fridge, taste for seasonings and serve.
