Sweet Corn Pico De Gallo
Sweet Corn Pico De Gallo goes great on tacos, chicken, and fresh fish.
Prep time- 20 minutes Serves 6-8 Ingredients: 6 cups sweet corn (frozen may be substituted for fresh) ½ cup each, red, yellow, and orange peppers chopped into ½ inch pieces 2 cups chopped Roma tomatoes, seeds removed ½ cup chopped red onion ½ cup chopped sweet, or Vidalia onion ¼ cup chopped cilantro 2 tablespoons fresh squeezed lime juice 3 tablespoons fresh squeezed lemon juice 2 tablespoons extra virgin olive oil 1 teaspoon fresh cracked black pepper 1 teaspoon Kosher or sea salt Directions Place all of the above ingredients in a bowl and combine. Let sit for 20 minutes, serve.
